Keto Chocolate Cake

Collagen Chocolate Cake
- 6 extra large eggs
- 100 grams of 90% Lindt dark chocolate
- ½ cup of erythritol (more if you like it sweeter)
- 10 grams of beef gelatine
- 10 grams of beef collagen
- 80 grams of grass fed butter/ghee
- 1 teaspoon of vanilla extract
- Put eggs and erythritol into a mixer and mix until soft peaks (7 to 10 mins)
- Put collagen and gelatine into 40ml of water and let sit while the egg mix is underway
- Melt the butter and 90% dark lindt chocolate in a bain marie (See vid here)
- When chocolate is melted and egg mix is ready, mix 1/3 of the egg mix with chocolate mix. Then spoon a small amount of that mix into the collagen/gelatine mix through.
- Then take the collage/gelatine mix and put into the bowl and mix thoroughly through.
- Now put 1/3 of the egg mix and fold into the bowl. And finally fold the remaining 1/3 egg mix in
- Now, bake in oven for 30 minutes at 150c
- Take out of the oven when the middle is slightly wobbly, which is the secret to making it gooie inside
