Keto Collagen Cookie
- 170 grams of almond meal
- ½ cup of erythritol (more if you like it sweeter)
- 1 tablespoon of beef gelatin
- 1 tablespoon of beef collagen
- 1 egg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 30 grams of cacao nibbles (optional)
- 30 grams of shredded coconut
- 30 grams of MCT
- 70 grams of grass fed butter/ghee
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- Put all dry ingredients into a bowl or mixer.
- Melt the butter and put all the wet ingredients and mix
- Put the wet ingredients into the dry and mix through
- Roll into 35 gram balls and put on baking tray slightly flattened
- Bake at 160 until browned to your liking – 12 to 20 minutes
