Collagen Chocolate Cake

  • 6 extra large eggs
  • 100 grams of 90% Lindt dark chocolate
  • ½ cup of erythritol (more if you like it sweeter)
  • 10 grams of beef gelatine
  • 10 grams of beef collagen
  • 80 grams of grass fed butter/ghee
  • 1 teaspoon of vanilla extract
  1. Put eggs and erythritol into a mixer and mix until soft peaks (7 to 10 mins)
  2. Put collagen and gelatine into 40ml of water and let sit while the egg mix is underway
  3. Melt the butter and 90% dark lindt chocolate in a bain marie (See vid here)
  4. When chocolate is melted and egg mix is ready, mix 1/3 of the egg mix with chocolate mix. Then spoon a small amount of that mix into the collagen/gelatine mix through.
  5. Then take the collage/gelatine mix and put into the bowl and mix thoroughly through.
  6. Now put 1/3 of the egg mix and fold into the bowl. And finally fold the remaining 1/3 egg mix in
  7. Now, bake in oven for 30 minutes at 150c
  8. Take out of the oven when the middle is slightly wobbly, which is the secret to making it gooie inside
