Keto Collagen Cookie

  • 170 grams of almond meal
  • ½ cup of erythritol (more if you like it sweeter)
  • 1 tablespoon of beef gelatin
  • 1 tablespoon of beef collagen
  • 1 egg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 30 grams of cacao nibbles (optional)
  • 30 grams of shredded coconut
  • 30 grams of MCT
  • 70 grams of grass fed butter/ghee
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  1. Put all dry ingredients into a bowl or mixer.
  2. Melt the butter and put all the wet ingredients and mix
  3. Put the wet ingredients into the dry and mix through
  4. Roll into 35 gram balls and put on baking tray slightly flattened
  5. Bake at 160 until browned to your liking – 12 to 20 minutes
